Adventures in Blood Sugar

Every day, since the beginning of this program, I've been getting up at around 6 am, and then struggling to stay awake in my 8 am class and 10 am classes.  Eyes crossing, closing, head jerking up to keep from falling.   For some reason 9 am and 11 am classes seemed ok.

Well, I ate more protein for breakfast today to see what would happen.  I had two hard-boiled eggs and a few pot stickers.

The result?  I wasn't sleepy at all until my 11 am class.

I love Chinese breakfast, but it seems like the hum baos and the rice porridge make my blood surgar crash at around 8:30.  My liver probably steps in to save my brain right around 9, but then I crash again at 10, followed by another liver rescue.

So from now on, I'm having two boiled eggs for breakfast, plus something with carbs.  I will have a blood sugar snack at the 10 am break in order to get me through till noon.  It will probably be beef jerky candy or peanuts... A third egg is probably too much cholesterol, right?

I'm not a blood sugar expert, but three eggs does sound like an awful lot of cholesterol for one day, especially if you're having meat later in the day. Probably wouldn't kill you to have that third egg every now and then, though...

I can't even imagine having three eggs in one day, nevermind repeatedly. Protein in the morning, especially combined with some complex carbs, however, is a very good thing.

Don't suppose you could get whole grain brown or wild rice with your breakfast, could you?
